Mel’s Weetabix Energy Balls

If (like us) you have overindulged over the Easter weekend, you might be ready for a healthier treat! These energy balls are a breeze to make and make a great lunch box treat. Customise them to suit the contents of your store cupboard.

Makes about 15 walnut sized balls

Ingredients

  • 5 Weetabix 

  • 200g medjool dates, stoned

  • 90g seeds (I used a mixture of pumpkin,  sunflower and sesame)

  • 40g dessicated coconut (plus extra for rolling)

  • 4tbsp cocoa

  • 2tbsp water

  • 2tbsp honey


  1. Pop all the ingredients into a food processor and blitz until everything is thoroughly chopped and starting to clump back together. This will take several minutes. 

  2. Using your hands, scoop up equal lumps of mixture and squeeze and roll them into balls. Roll them in the coconut.
