Mel’s Peanut Butter Pie

This rather toothsome treat is a quick and easy pud to rustle up when you have guests. With no baking, it is assembled in minutes – giving you more time for stitching whilst still impressing your friends!

  

• 20 snack size Twix bars

• 70g smooth peanut butter

• 230g full fat cream cheese

• 65g icing sugar

• 450ml whipping cream (softly whipped)

• Mini Peanut Butter Cup sweets to decorate


  1. Pop the Twix bars into a food processor and pulse until they are fully broken up and starting to come back together into clumps (you will hear a change in sound as the mixture is ready). Tip the crumble mixture into a lightly greased 9 inch pie dish and press it across the bottom and up the sides to make a pie crust. I use a spoon to get a nice smooth finish once done. 

  2.   Beat the peanut butter, cream cheese and icing sugar together in a bowl. Fold in about half of the whipped cream. Tip into the pie crust.

  3.    Spoon the remaining cream over the top, then decorate with the Peanut Butter Cup sweets. Pop in the fridge for an hour to firm up.
